Ricky Lynn Parker Owner, Scotts BBQ, Lexington, TN Recently rated the #1 BarBeQue Place in the U.S. by The Washington Post, Scott’s BBQ is still a down-home family owned business. The whole family works to help out at the BBQ pit with Rick working 15-16 hour days / 6 days a week. During the holidays, we BBQ and smoke turkeys and hams for Thanksgiving, Christmas and July 4th festivities. We cook special orders daily like chicken, deer or ribs and cater many different occasions including wedding rehearsals, general meetings, luncheons… whatever our customers need. Rick’s clientele come from all over…some come from area towns while others drive as far as 100 miles + to get his BBQ. We also overnight ship barbequed meats anywhere in the world with plenty of notice. Our customers have included folks throughout the US and as far away as Alaska and Switzerland! Rick learned everything he knows from Mr. Scott as far as slow cooking, using only hickory coals and a special breed of Duroc swine to make the most flavorful and succulent pork. As far as a culinary influence, I would say he doesn’t have one. He just cooks the way he has learned and tried to perfect it to keep making it better and better. John T. Edge of Southern Foodways and Viking Range Corp from Mississippi recently invited Rick to the Culinary Institute of America www.prochef.com Worlds of Flavor Conference in St. Helena CA.
